I know the feeling…. You just got home and now you need to get dinner on the table fast because your kids are already asking for food and you would rather they don’t dive head first into the candy dish.  I gotcha girl.  I have a list of my go to quick and easy dinner recipes and I am going to share them with you for when you just need dinner to be done. There may be a variety of times when you just need to get dinner over with. For example, maybe you have a PTO meeting or maybe the kids are in baseball, whatever the reason, put a few of these meals on your Favorite Meals worksheet friend.  Check out the post I did on how to plan meals for the month in less than 15 minutes.  It is a life changer.

10 Quick and Easy Dinner Recipes to Get Dinner Done Fast

I have a few websites that I go to often to check and see what they have going on in the recipe department.  I particularly love SkinnyTaste ( have her cookbook), anything Rachel Ray (I watched her like it was my job in college) and Organize Yourself Skinny (girl knows what she is doing).

Healthy Baked Chicken Nuggets

I literally make these once a week and my kids eat the EVERY. SINGLE. TIME.   It is crazy.  They gobble them down so fast.  I usually make these with roasted or steamed veggies and BOOM.  Dinner is done.  (Gina you are a genius!)

Skinny Mac and Cheese

Another SkinnyTaste recipe.  I make this on average once a month.  Here is a little trick with this.  Try to make it up the night before if possible and then throw it in the oven when you get home.  If you have leftovers, you have another meal for lunch or dinner the next day.  Leftovers are your friend…mmmk?

 

Slow Cooker Sausage and Peppers

This recipe is from Organize Yourself Skinny and it is so good. I use turkey sausage instead of pork sausage and there isn’t a taste difference that I can tell.  I love this recipe and as a bonus – it is a crock pot recipe which is awesome!

 

Italian Shredded Beef

These are perfect if you want to throw something in the crock pot and have something ready when you walk in the door.  This does require a bit of planning, but if you can remember to get this in the crock pot before you walk out the door in the morning, you will literally spend 5 minutes getting it ready when you come home.  

Orecchiette Pasta with Chicken Sausage and Broccoli

My kiddos will also eat this very well so this is a go to and it is so easy to make.  There are a lot of vegetables in this recipe that are kinda hidden so if you have a picky eater that will eat noodles and sausage, give this recipe a try.  It is another Skinnytaste recipe from the Skinnytaste cookbook I got for Christmas.

 

Homemade Pizza

Time saving tip: Make up the dough in the morning. It literally takes 5 minutes to mix up the dough.  Then when you get home, preheat the oven, top the pizza with all the things and bake.  Good, homemade pizza will never disappoint your family. This is the crust recipe I use and it is awesome and easy.

 

Baked Chicken Fajitas

OMG.  These are sooooo good!  You just cut all your stuff up and throw them in the oven.  How simple is that business….seriously.  Preheat the oven when you walk in the door and get busy cutting up teh chicken and veggies.  

Crock Pot Ham and Potato Soup

Anything crock pot will save you time.  If you are feeling particularly stressed out, think about crockpot meals that will save you time.  We love ham and potato soup here and this recipe will not disappoint.   I also make this ham and potato soup recipe pretty often.  Consider this if you forget to plan a meal for that night.  You can get this on the table pretty quickly.

Avocado Caprese Salad

Dinner doesn’t always have to be fancy.  Consider eating a salad at the end of the day.  This is one of my favorite salad recipes.  I am in love with avocados!  If you feel like you want something warm, consider adding soup or a simple sandwich to this recipe.  

Easy Baked Salmon

There is seriously nothing easier than throwing stuff on a pan and putting it in the oven.  This is another go to recipe for us.  We love salmon in our house and eat it probably 2 times per month.  Just add your veggies to the baking sheet and boom, you have dinner.
