This is a super simple, whip together kind of a lunch idea that may inspire you to put together other quick lunch ideas. We came home from church today and I was panicking because I didn’t know what the heck to make for lunch for Joey and I. Logan, the lucky duck, was passed out in the car so he got a one way ticket to his bed.
So after I hauled Logan up to his bed, I frantically looked in the fridge to see what I can whip up in a hurry as my 4 year old is yelling at me that he wants a “nack” because he is so hungry. In the fridge, I spot leftover chicken, tortillas and BBQ sauce. Boom. Right then and there I am thinking pizza.
I was going to take a picture of the ingredients as the “before” but there was no time for that.
1 Chicken breast, fully cooked
2 whole wheat tortillas
Sweet Baby Ray’s BBQ sauce
1/2 cup cheddar cheese
Super easy instructions because that’s how I roll. Preheat oven to 425 degrees Farenheit. Dice chicken. Put said chicken in pan with about a tablespoon of Sweet Baby Ray’s. Mix together and heat until warm. Spread around about a teaspoon of BBQ sauce on each tortilla. Put chicken on top of the whole wheat tortilla. Split the cheddar cheese evenly between the 2 tortillas and bake in the oven for about 7-9 minutes, just until the cheese melts. Take out and inhale as fast as humanly possible because that is what Joey and I did!
You can add other ingredients on top if you wish, but it isn’t completely necessary. Also, you can pair it with a side of veggies as shown or you can serve with a fruit of your choice.
Now think of what you have in your fridge that you could put on top of a tortilla. Ummm, yeah, just about anything. Your welcome.
