Chipotle has nothing on this Momma. I know that sounds arrogant, but when my husband deems a meal one of the best I have ever made….. yeah, pretty sure Chipotle is a thing of the past. We eat a lot of Mexican in our household. We probably eat a Mexican dish once a week. Between tacos, burritos, enchiladas, yeah, we love Mexican. Not gonna lie, this chicken burrito bowl recipe is pretty amazing and super easy to make. And as a bonus, it is healthy!

The guacamole is one of my favorites from the 100 Cheap Clean Eating Snack Ideas I wrote about. It seems so hard to come up with good, healthy snacks, but guacamole is just that- good and healthy.
Anyways, back to the yummy chicken burrito bowl recipe. There are a few ingredients that you need:
The Best at Home Chicken Burrito Bowl Recipe Ingredients:
1 pound chicken tenderloins (family of 3-4), cut into thin strips
1 red or green pepper, sliced thin
1 onion, sliced
2 cloves garlic, minced
juice of one lime
1 tsp chili powder
1/2 tsp cayenne
1/2 tsp cumin
Dash of salt and pepper
2 cups brown rice
Preheat oven to 425 degrees Farenheit. Spray the bottom of a glass dish with a bit of cooking spray or use a tsp olive oil to rub to the bottom of the pan. Add the chicken, peppers and onion to a glass dish. Mix around a little and add the rest of the ingredients.
Bake in the oven for 20-25 minutes or until chicken is done. Since the chicken is thin, it will cook pretty fast.

In the meantime, prepare brown rice according to package instructions. You can buy the kind your microwave or by Minute brown rice you cook on the stove while you wait for the chicken to get done. Did you know that you can prepare and freeze rice ahead of time? I didn’t either until I read the Organize Yourself Skinny eBook.. That Tammy chick is pretty clever. I started planning my meals a couple weeks ago using her partial prep method and I already feel so much less stress at dinner time. (I am an affiliate for Organize Yourself Skinny because I totally believe in her product and recipes).
Back to the chicken burrito bowl recipe. Sorry. Got side tracked there for a second. After you are finished with the rice and the chicken is done…. the magic happens. You build your bowl.
the largest bowl you have a nice, sensible, portion sized bowl (or plate) out and place 1/2 cup rice in the bowl. Add the chicken and veggie mixture on top. Add guacamole and any other toppings desired such as cheese, lettuce, salsa, sour cream (greek yogurt for a sour cream substitute).
Last step, devour! It is seriously so good and a cinch to whip up. If you are using the partial prep method, (as I mentioned above that I have been using) when you get home from the grocery store, cut chicken into thin slices and place in a freezer bag. Slice veggies and either place in same bag or a different bag and label both bags and put them together in the freezer. Then, when you decide to make the burrito bowls, you can just throw your chicken and veggies in the oven (if frozen, cook bout 35-40 minutes and check chicken to see if it is done). You can just prep your rice and make your guacamole. It takes so much stress away from having to prepare the entire meal the night you want it!
This chicken burrito bowl recipe is healthy and super easy to make. There is so much flavor and it tastes just as good as that Mexican place…. What’s it called? Oh yeah, Chipotle. ( Just kidding. I still love Chipotle).
