Guacamole is like ketchup… You can put it on anything. Ok, so maybe I am exaggerating just a bit, but seriously who doesn’t love guacamole. It is super easy to make, it is healthy, you can pair it with lots of veggies, pita, corn chips or put it on toast. The green stuff is amazing!
Just because I am a little nerdy, here are some great health benefits of avocados in case you didn’t know:
- Avocados are a source of healthy fat (yes there is such a thing as healthy fat)
- They are a good source of vitamins like Vitamin K, B5, B6 and Vitamin E ( they also contain some smaller amounts of other vitamins and minerals)
- They do not contain cholesterol
- There is no sodium found in avocado
- Good source of potassium
- They are a good source of fiber (huh, didn’t know that one)
- The fat found in avocados can help you absorb nutrients from other plant sources (thank you Mr. Avocado)
- They may help to reduce symptoms of arthritis
- They are awesome- just had to throw that in there:)

So, I have a very easy guacamole recipe to throw together that will be sure to please. I have made this for years and it is always a hit. I am a minimalist when it comes to cooking so the fewer ingredients the better.
My husband never tried guac before he met me….. now he is a believer in the green goodness.

First, how do you court an avocado. Yes there is a proper selection process to the perfect guacamole. Here is a tip to see if the avocado is ready: When you squeeze it, do you leave a gentle imprint? If so, take that baby home with you. If it feels very squishy, throw that fish back and squeeze a few others. If they are really green and hard, you can make guac later in the week, but they just aren’t ripe enough at that point to make guac.
Easy 4 Ingredient Guacamole:
3 avocado, removed from skin and seed removed
3 fresh limes (squeeze them also and if a little squishy, you will get good lime juice from them)
2 tbsp fresh cilantro, washed and coarsely chopped ( feel free to use dried or you can buy the cilantro in a tube in the produce section at Marc’s or Giant Eagle. They now sell it at WalMart also)
1/4 medium Red onion, chopped ( ok serious question… do you call it a red onion or a purple onion?)
Place seeded and skinned avocado in a bowl. Mash with a fork. Add onion, cilantro and lime juice. Stir. You see that pool of lime juice in the picture above. That is what you are going for to have the perfect combination of avocado to lime juice. I use 1 lime per avocado to make sure there is enough lime taste to the guac. Serve with veggies or tortilla chips. You can also place it on a burrito bowl (recipe coming soon).
We often will do appetizer night for dinner and more often than not, we include this fantastic guac recipe in the mix. We have also used it on burgers and it was great. I have also used an avocado as a substitute for mayonnaise for tuna. Sounds a little crazy but it works and it tastes really good. I usually omit the cilantro in this case but will stick with the lime juice and onion with the tuna. You could easily substitute half of an avocado in this tuna recipe
