tuna with yellow pepper

 

I love quick lunch ideas…. Quick and healthy.  I usually prefer a hot lunch but this is really good in a pinch. I love tuna and yellow peppers.  I have had tuna stuffed peppers but I tend to be more of a finger food kind of gal.  It just seems to work better.  I can walk by my plate and grab something to stuff in my mouth while I work around the house.  I love the yellow pepper “nachos” because they are like little scoops for the tuna…yum.  So, hence the recipe- Tuna with yellow pepper nachos.

 

Here is what you will need:

ingredients

 

1 package single serving tuna

1 yellow pepper

1 stalk celery

2 teaspoons mayonnaise (I generally use mayo with olive oil)

1 tablespoon spicy mustard

1 tablespoon onion

 

Put tuna in a bowl.  Mix with the wet ingredients- mayo and mustard.  Chop the celery and the onion and mix with tuna and wet ingredients.

Don’t mind my cutting board.  I use that thing A LOT!  It is beat up for sure!

 

Next, cut the pepper into cubes big enough to scoop.

Do everything you can so your 4 year old doesn’t steal every last one of your peppers.  I swear half of mine were gone before I could eat.

Then simply put it on a plate and scoop up the tuna with the peppers.  I ate mine with a small salad and some blackberries.  Delicious and healthy.  If you aren’t a fan of yellow peppers, you can certainly use any pepper you like or substitute a lettuce wrap or make a cucumber boat.  Just a thought.
